This Limited Edition is named after the owner Fernando Beloni, who a member of the renowned Expocaccer cooperative in Fazenda Horizontina in the Mineiro region. He has crafted a coffee that’s as remarkable for its taste as it is for its environmental impact. Once deemed unsuitable for coffee, the Cerrado Mineiro’s transformation into a coffee powerhouse is a testament to Brazilian agricultural ingenuity. Its unique climate, featuring distinct wet and dry seasons, coupled with rich, deep soils, creates an ideal terroir for specialty coffee production.
The Paraíso varietal, a product of Brazil’s coffee research, combines disease resistance with exceptional cup quality. Its cultivation at Fazenda Horizontina showcases the farm’s commitment to both quality and sustainability.
Beloni’s use of aerobic fermentation is pushing the boundaries of flavor development. This process, which exposes the coffee cherries to oxygen during fermentation, results in a clean, sweet profile with distinctive notes of grapefruit and white wine.
What truly sets Fazenda Horizontina apart is its commitment to regenerative agriculture. Over the past three years, Beloni has focused on enhancing soil health, boosting biodiversity, reducing greenhouse gas emissions and increasing carbon sequestration. These efforts culminated in the farm’s certification for regenerative practices by Control Union in December 2021, marking a significant milestone in sustainable coffee production.
