Baoshan, located in the western reaches of Yunnan province, is often referred to as the “Jade City”, and serves as the historic cradle of Chinese coffee cultivation. The region is defined by its dramatic topography, where the Nu River carves through steep valleys, creating a unique microclimate. Here, high altitude coffee trees benefit from rich volcanic soil and a significant temperature swing between day and night, which slows cherry maturation and concentrates sugars.
While often known for its resilience, the Catimor variety finds a sophisticated expression in the high altitudes of Baoshan. Locally celebrated as “Yunnan Small-Bean Coffee”, these trees have adapted perfectly to the region’s volcanic soil since their introduction in the 1980s. At over 1,300 metres, the cool mountain nights slow the maturation of the cherries, refining Catimor’s naturally sturdy character into a cup of surprising elegance. This elevation strips away the typical herbal edge of the variety, replacing it with the sparkling acidity and deep brown sugar sweetness that have allowed this microlot to consistently dominate regional specialty coffee competitions.
The processing reflects a commitment to clarify. By utilising a traditional fully washed method and drying the beans on elevated patios or raised beds, the producers strip away any earthy interference. This allows the natural, crisp characteristics of the Baoshan landscape – cool mountain air and mineral-rich waters – to shine through in every sip.
