This Limited Edition is from North Sumatra, and if you’ve tried any of the beans from this region, you’ll be familiar with the bold flavours that come from such rich and fertile highlands. The strong earthy notes are exemplified in this medium-dark roast, together with sweet caramel and herbal tea.
Wet hulling, or giling basah, is the traditional processing method used in Indonesia. Once the beans are pulped from the cherry, they are then fermented overnight, and the mucilage is subsequently removed by washing. The coffee, covered in a wet parchment layer, is then sun dried until it reaches the required moisture content. This results in a strong cup with low acidity and a medium body.
