The Coffee Bean
This single origin bean comes from the Cerrado Mineiro region in Brazil. These beans are specialty grade, scoring over 80 points on a 100 point scale by the SCAA. We freshly and locally roast them to a medium-dark profile, with taste notes of milk chocolate, caramel, and toasted hazelnut. This meticulous care is the reason why the farm performs well in the prestigious Cup of Excellence competitions.
The Chocolate
This 64% single estate bean to bar dark chocolate is made from ethically sourced cacao beans from Mr Simon Ting’s farm estate located in a small town called Panchor in Malacca, Malaysia. 31-year-old Mr Simon Ting took over a plot of 20 acre land from his father, and decided to plant cacao and coconut trees. Simon learned everything from scratch from planting and harvesting, to fermentation and drying. His hard-work paid off as his cacao beans are now sold to several major artisanal chocolate makers in Malaysia. He currently operates 4 farms located in Panchor and Lendu within Malacca with a total land area of 20 acres planting various cacao varieties.
