Our featured coffee this month is an exquisite specialty-grade and certified organic coffee. The Organic Chai Ya Hibiscus washed microlot is sourced from the Guji region near Gedeo Zone where Yirgacheffe and Sidamo are located, and this area is known to produce incredibly high quality coffees over the years.
Grown by various smallholder farmers, the handpicked cherries are delivered at the station where they undergo vigorous hand sorting to remove any green or under ripe cherries after which they are pulped using an eco friendly pulping wet mill. The coffee beans are then dried, covered in their parchment – all part of the primary processing procedure that is imperative to achieve the amazing quality and character of this coffee. We love its prominent fruity taste notes and defined acidity, and can’t wait for you to treat yourself to a real beauty from the Ethiopian land!
